Our Own House Recipe

ITALIAN Meatballs

INGREDIENTS
  • 2 lbs. Bringhurst Ground Mix (made from beef, pork, and veal).  Or, if you prefer, substitute 2 lbs. ground beef.
  • 3 cloves minced garlic
  • 1/2 cup parsley (chopped)
  • 1 cup Pecorina Romano
  • two eggs.
  • one tsp. pepper
  • one cup Panko bread crumbs
  • 1/2 cup milk
  • 2 tsp. Italian seasoning
  • 1/4 lb. Pancetta

INSTRUCTIONS
  1. Dice Pancetta, and pan fry until crisp. Drain fat.
  2. In a large bowl, mix eggs, milk, and garlic
  3. Mix in dry ingredients
  4. Gently mix in Ground Mix and Pancetta, being careful not to over mix.
  5. Hand roll meatballs to desired size
  6. Pan fry in olive or vegetable oil, or bake at 400° for 10-15 minutes.
  7. Simmer in marinara sauce for 20 minutes, then serve over your favorite pasta.
